Honey wine

Fermented honey with water is called mead and it's sooo yummy. I went to the Redstone Meadery in Boulder and it was neat to see how they make mead. They use fruits, honey, and water to make some really delicious honey wine.
Has anyone drank mead before and did they like it?

      You have to find it in specialty liquor stores, a cool brand to check out is redstone. you might even find it online.

    hands down, my favorite commercial meade is from Mountain Meadows in California ...especially the sweet honey wine. For those who are interested, I think there is a site on the web if ya google for it.

    but the best I ever had was a friend's homebrew made with plums. It turned out light and fragrant with fine little champagne bubbles. I'm sure my memory exaggerates, but it was nothing short of exquisite.

    and then there was the another friend's batch of spiced meade ...didn't have a recipe but "generally knew what went into it". Well, even with a five gallon batch, a cup of cloves is waaaay too much. hehe...

    myself, I've only brewed one batch and I really must disagree with the recipe that called for boiling the honey for a half hour ...completely killed the flavor of the honey (and it was some YUMMY honey). It didn't turn out completely bad it still had a faint yeasty taste ...not sure why or what to do to correct it. Anyone out there know?

      Yes, don't BOIL the honey ! It only needs to be warmed up some so it dilutes into the water evenly. Honey is naturally antibiotic so contamination isn't as easy as with grain fermentations.

      can you make honey wine raw? if any one had a recipie for a truely raw mead i would be gratefull!!!!!!!!! let me know...

        I would think that by fermenting the honey, it is not considered 'raw' anymore? But I would definitely like to try the Ethiopian version.

        It is not a good idea. The heating process is to kill off other bacteria and allow a clean slate for the yeast to do it's work. A ferment without such a step is begging for all sorts of problems.

    The best mead I ever had was in the tiny town of Suzdal, in Russia, where the monks at the local monastery still make mead according to a recipe from the 900s AD. It was incredible stuff, unfiltered, earthy and full of whole spices. I still pine for it every time I taste a commercially produced mead. Nonetheless, I will continue to sample every mead I come across in hopes of finding one that can hold a candle to the Suzdal monks' brew. It's a formidable mission, but I'm a formidable woman. ;)

      I live in BC Canada.
      I don't think I can buy mead in Canada.
      I heard that there was a producer on Vancouver Island..
      I've never seen it in a liquor store..
      I just had delicious mead from california..elderberry honeyrun, mmmmmmmmmmmmmmmm.
      I had to go to california to get it tho..
      Does anyone know about why I may not be able to get it here? Or if I can, or where?
      Or maybe I should order a case from a ny or cali meadery.

        About a week ago I cooked up an experimental batch of meade ( 3gal 0
        which consisted of baked then liquified butternut squash, cinnamon, corriander, clove, nutmeg and unfiltered wildflower honey ( yum ).

        Nymphaea caerula is an excellent flower to toss in a batch of meade btw.

        Meade is easy to make, it just takes forever
        to ferment. Patience makes good meade !

          I was actually just looking for information on soaking some Nymphaea caerula with meade. I was planning on buying a bottle of meade or two and then soaking it with the flowers. Is there anything specific i should know if i plan on mixing it that way? Or the type of meade that would work best? Any advice would be great. Aloha

        I know that i have bought Moniack Mead (import from Scotland) in Montreal. It is very good!

        I also know of meadery in Ontario. Try the website www.munrohoney.com I've heard of it but have never tried their mead.

        dear amy; I am not sure if they can ship to Canada, but Redstone Meadery, in Boulder Colorado has some of our favorite meads! I know that in the U.S. different states have different laws. My husband makes mead with honey from our very own bees and my favorite so far is his Huckleberry. It is SO YUMMY!. Go to www.redstonemeadery.com OR, it may just be www.redstone.com don't remember, but you will find it easily. Or go to your local liquor store and request that they carry it. :)

    I have drunk it in the past. It is delicious. I have actually drunk many different kinds included homemade. One warning, not from personal experience, don't drink too much I hear it gives uniquely intense hangovers.

      Actually I have found the opposite to be true. Of course hangovers are highly subjective anyway due to numerous personal variables, and whether or not you drink enough water before retiring after drinking, most people don't.

    At most authentic Ethiopian restaurants you can get honey wine. it's very sweet but good and gets ya drunk rather quickly.

      Most Ethiopian meades contain hops as an ingredient. They never put Bee pollen , Royal jelly , Propolis or Apis in their meades.

      I bottled some Blueberry meade resently, quite yummy !

    The best meade I have found that is available commercially comes from a small organic apiary near me.

    It is better than chaucers or mt airy hands down and quite reasonably priced.

        Honey, water, and yeast. Some sulfites to stop the ferment as is used in almost all commercial wines to prevent them from exploding the bottles.

            I don't either in my own wines, but mine never sits that long. Yours probably doesn't either and of course businesses tend to be much more cautious with all the idiots out to sue over the least excuse these days.

                That's cool. Are they bottled and corked? How do you keep them from going into a second ferment?

                  I use bottle caps. Second ferment ? I let the batch finish out in the carboy
                  and then bottle it, easy enough. I don't resist any urges, I simply make batch after batch
                  so there is always something to drink besides all the beer and agave wine I make too.
